101RECIPES: Biscottella Apple Cake
The aromatic combination of apples and cinnamon is always really comforting on cold winter days; we’ve encapsulated this sensation in a delicious cake in which the fruit par excellence is combined with Biscottella: a delicious drink with a biscuit and cinnamon flavour… A true fairytale! Are you ready for the Biscottella Apple Pie?

Ingredients
- 300g of 00 flour
- 150g of sugar
- 3 eggs
- 100g of seed oil or melted butter
- 3 cups of 10CAFFE’ Biscottella
- 4 apples
- 1 lemon
- 1 sachet of Vanillin
- 1 sachet of baking powder
Preparation
Before you start preparing the Biscottella Apple Cake, preheat the oven (static) to 180 degrees. Now prepare the 3 cups of 101CAFFE’ Biscottella with your coffee machine and set them aside to cool. Slice the apples after peeling and coring and set aside.
Separate the yolks from the whites and place them in two different bowls; in the bowl of egg yolks add the sugar, the grated zest of the lemon and the vanillin and mix with a whisk until achieving a smooth consistency.
Now, add the seed oil or the butter (previously melted in a bain-marie or in the microwave and left to cool). Mix everything well and add half of the Biscottella.
Continue preparing your Biscottella apple pie by whipping the egg whites until they form stiff peaks and set aside.
Now in the mixture you created earlier, first add ¾ of the sliced apples (and mix well) and then half of the flour with the baking powder (previously sifted). Add the other half of the Biscottella and, continuing to mix, add the remaining part of flour and yeast.
Once again, the mixture must be creamy and even. Next, add the whipped egg whites while continuing to mix; remember: always mix in one direction with a soft spatula, from bottom to top, to avoid the egg whites “sinking”.
Now grease and flour a 26 cm-diameter tin and pour in the mixture; once poured in, arrange the remaining sliced apples on its surface and bake in the oven for around 35 minutes. The usual toothpick test will help you understand when your Biscottella Apple Cake is ready.
Let it cool before sinking in the knife as you start to cut the first slices!
You can enjoy your Biscottella Apple Cake as it is or alternatively dust it with some powdered cinnamon. An almost magical dessert whose aroma will fill your home with even more joy.
