Chocolate and coffee ‘Ciccio’ pancake

Ingredients (quantities for 1 thick pancake):

  • 65 g flour
  • 2 teaspoons of sugar
  • 1 egg
  • 10 g of bitter cocoa powder
  • 40 ml of milk
  • 10 ml of ristretto coffee (cold)
  • 1 teaspoon of baking powder

 

Preparation

To prepare the thick chocolate and coffee pancake, start by preparing the coffee and letting it cool. In fact, for the best result, the coffee will have to be cold – it’s even better if it’s from the fridge.
In a bowl, beat the eggs with the sugar until frothy.
Add the flour, cocoa and baking powder and mix thoroughly until there are no lumps.
Gradually pour in the milk and ristretto coffee, continuing to stir until you have a smooth mixture.
Heat a non-stick frying pan about 12 cm (4 inches) high and pour in the batter. Cover it with a lid and cook over a low heat for 8 to 10 minutes. Turn the thick pancake over and continue cooking for another 5 minutes or until it looks done.
Savour it warm, with a drizzle of sweet maple syrup or another topping of your choice.
