Here’s how to prepare two cakes.
For the two cakes:
- 100 g butter
- 100 g dark chocolate
- 2 tablespoons of espresso coffee
- 2 whole eggs
- 2 egg yolks
- 60 g granulated sugar
- A pinch of salt
- 2 tablespoons of flour
For the filling:
- 25 g dark chocolate
- 15 g unsalted butter
Preheat the oven to 200°C and butter and flour two soufflé or muffin molds, ensuring excess flour is removed.
In a small saucepan or using a double boiler, melt 100 g of dark chocolate and 100 g of butter, stirring until smooth and homogeneous. Add two tablespoons of espresso coffee and mix well. Let it cool slightly.
In a bowl, whisk together two whole eggs, two egg yolks, 60 g of granulated sugar, and a pinch of salt until you get a creamy mixture. Add the melted chocolate and butter mixture and mix thoroughly. Finally, fold in two tablespoons of flour.
Pour half of the mixture into the prepared molds. Reserve the other half.
Meanwhile, prepare the soft centers. In two separate small saucepans or using a double boiler, melt 25 g of dark chocolate and 15 g of butter in each. Stir until you get a smooth cream.
Place a teaspoon of melted chocolate cream in the center of each mold on top of the cake mixture. This will become the delicious molten heart of your dessert.
Cover the chocolate hearts with the remaining cake mixture.
Place the molds in the preheated oven and bake the cakes for about 12-14 minutes, or until the edges are set but the center is still soft.
Carefully remove the cakes from the oven. Let them rest for a minute, then gently invert them onto individual plates. The coffee molten lava cakes with a dark chocolate heart are perfect when served warm, perhaps dusted with powdered sugar or accompanied by a scoop of vanilla ice cream. Enjoy your meal!”
