101RECIPES: Coffee breadsticks
Grissini breadsticks are one of the baked specialties that best represent Italy across the world. Created in the Turin area in 1675, they are now one of the most versatile foods in Italian cuisine, used as bread substitutes, as a snack for all ages, as an on-the-go food to keep in your bag or handbag, ready to be eaten with either sweet or savory foods. Almost everyone enjoys them, and they come in dozens of different varieties: with olives, dried tomatoes, herbs, onions, spices, seeds – and yes, also with coffee. Here’s our recipe:

Ingredients:
● 100 g of type 0 flour
● 150 g of type 1 flour
● 50 g of yeast
● 25 ml of seed oil
● 75 ml of water
● 20 ml of coffee
● 3 g of salt
● 1/2 teaspoon of pepper
● 1/2 teaspoon of sugar
Preparation:
To make your coffee grissini breadsticks, the first thing to do is prepare the coffee. For this recipe, we recommend a coffee with an intense but not-too-strong aroma, such as the Sicilia Premium from 101CAFFE’.
Once ready, set it aside to cool.
In the meantime, dissolve the yeast and sugar in 25 ml of water and let the mixture rest for 10 minutes.
Mix the two flours on a pastry board and add the salt, pepper, oil, coffee, yeast and remaining water. Start mixing everything with a spoon.
Once you have a soft and elastic dough, place it in a bowl and cover it with a cloth or plastic wrap. The dough for the coffee grissini needs to prove for at least two hours.
After this time has passed, spread a little oil onto the pastry board with a brush and roll out the coffee grissini dough, first with your hands and then with a rolling pin. It should be around 1.5 cm thick.
Now, cut some strips and work them until you get log-shaped strips that are about 20 cm long.
Place each strip on the baking tray (which you previously lined with baking paper), one next to the other, and let them rest for a quarter of an hour before putting them in the oven
Now, you can put your coffee grissini in the oven (static) and let them bake for about 20 minutes at 190°-200°C.
