Preparation

Continue to gently mix, working from the center outward, until you achieve a smooth and lump-free consistency. Pour the melted butter into the batter and mix well to make it homogeneous. Once the batter is ready, cover the bowl with a clean kitchen towel and let it rest at room temperature for about 20-30 minutes. This will give the ingredients time to fully blend.
After this time, heat a non-stick skillet over medium-low heat, the size of which you prefer for the shape of the crepes, and lightly grease the surface with a bit of butter. Cook the coffee crepes until the edges begin to detach from the pan, and the top surface slightly dries. At this point, use a spatula to gently flip it and cook the other side until golden brown. Repeat the process with the remaining batter, lightly greasing the pan with butter before pouring each new portion of batter.
Serve the coffee crepes hot and garnish them as desired with maple syrup, honey, or whipped cream. You can also add fresh fruit or chopped nuts if you like.
