101RECIPES: Coffee Biscuit Ice Cream

Coffee ice cream is part of our history, ever since the famous “Coppa del Nonno” (Grandfather’s Cup) entered the homes of Italians of all ages in the 1950s. It is from this tradition that 101CAFFE’ has drawn inspiration to offer you a perfect recipe for summer snacks, both for adults and children—the coffee biscuit ice cream.
The ingredients are simple but good, and the preparation is very easy.

Coffee Biscuit Ice Cream

Ingredients for 4 servings:

  • 8 dry biscuits (such as Oro Saiwa)
  • 400 ml of fresh whipping cream (can be plant-based)
  • 4 tablespoons of instant coffee
  • 70 grams of powdered sugar
  • 300 grams of condensed milk

To prepare the coffee biscuit ice cream, the first thing to do is to prepare the coffee cream. For this recipe, we recommend using instant coffee. Start by chilling the condensed milk in the refrigerator to cool it down. Then, take 50 grams of whipping cream and heat it gently together with the coffee until the coffee dissolves. Allow it to cool completely, and then add the cold condensed milk, stirring well until the mixture is well combined. Whip the remaining whipping cream with powdered sugar until stiff peaks form, and then slowly add it to the coffee mixture, gently folding it in with a spatula, using upward strokes. The mixture should be very fluffy and light.

Next, line a baking dish that can hold 4 biscuits with plastic wrap and create a layer of tightly packed biscuits. Pour the mixture over the biscuits and smooth it out evenly. Cover with a second layer of biscuits and place it in the freezer for at least three hours. After the three hours have passed, remove the dish from the freezer and divide the ice cream into individual servings using a thin spatula or knife, following the shape of the biscuits. Let it sit at room temperature for 10 minutes before enjoying it or serving it to friends.

Your coffee biscuit ice cream is ready to be savored in all its goodness and authenticity.
