Coffee Ricotta Cannoli

Ingredients:

For the cannoli dough, you’ll need:

  • 150g of flour
  • 20g of sugar
  • 1 egg
  • 30ml of strong, cooled coffee 
  • 20ml of coffee liqueur (optional)
  • A pinch of salt
  • Vegetable oil for frying

For the coffee ricotta filling, gather:

  • 250g of fresh ricotta
  • 50g of powdered sugar
  • 30ml of cooled espresso coffee 
  • 20g of grated dark chocolate
  • Candied orange peel (optional)
  • Cinnamon powder (optional)

Instructions:

Making the cannoli dough:
In a bowl, sift the flour, forming a small well in the center. Add sugar, salt, the egg, cooled strong coffee, and, if desired, coffee liqueur.
Now, very carefully, mix the ingredients until you get a homogeneous dough. It will take some effort, but continue working the dough until it becomes smooth and elastic.
Once you’ve achieved the desired consistency, wrap the dough in plastic wrap and refrigerate it for about 30 minutes. This resting period will allow the dough to relax and make it easier to work with later.
Preparing the coffee ricotta filling:
In the meantime, let’s prepare the delicious coffee ricotta filling.
In a bowl, place the fresh ricotta, powdered sugar, and cooled espresso coffee. Mix carefully to obtain a creamy and homogeneous filling.
Add the grated dark chocolate to the filling and mix again. If you desire an extra flavor kick, you can also add some candied orange peel or a sprinkle of cinnamon. These ingredients will give the filling a special aroma.
Place the filling in the refrigerator while we proceed to prepare the cannoli dough.
Making the cannoli:
Now that the dough has rested, it’s time to create the actual cannoli.
Heat a generous amount of vegetable oil in a deep, heavy-bottomed pot until it reaches a temperature of about 180°C (356°F).
Roll out the cannoli dough on a lightly floured surface into a thin layer. Use a cookie cutter or a round glass to cut disks from the dough, then wrap each disk around a metal or wooden tube.
Fry the cannoli in hot oil until they become golden and crispy; it will only take a few minutes. Then, drain them on paper towels to remove excess oil.
Filling:
Once the cannoli have cooled, fill them with the coffee ricotta filling. You can do this with a spoon or use a pastry bag for a more professional touch.
Decorate them with a sprinkle of grated dark chocolate or candied orange peel, if desired.
