101RECIPES: Coffee swirls
Stir and keep stirring. There’s always coffee in the 101CAFFE’ recipes! Here we offer it as the main ingredient of coffee swirls, exquisite two-colour, multi-flavoured shortbreads.
- 380 g of 00 flour
- 100 g of icing sugar
- 60 ml of coffee
- 1 egg
- 200 g of butter
- 1 sachet of vanillin
- 1 tablespoon of cocoa
To prepare your coffee swirls, the first thing to make is… the coffee.
For this recipe we suggest an intense and full-bodied espresso, such as the 101CAFFE’ Neapolitano coffee.
Once the coffee is ready, divide it into two cups and allow to cool to room temperature.
In a large bowl place the flour, the butter at room temperature cut into small pieces, the icing sugar and the egg: mix everything with an electric whisk.
Now divide the dough of your coffee swirls into two equal parts and place them in two separate containers: in the first add the cocoa and a cup of coffee to the mixture, in the second add the vanillin and the other cup of coffee.
Mix the two doughs well (separately) until you obtain a consistency that allows you to spread them out (separately) on a pastry board, creating 2 rectangles with a thickness of 3 mm.
Now it’s time to shape what will be the coffee swirls: overlap the two layers, leaving them slightly offset, and roll them gently starting from the one in contact with the support base. At this point, wrap the entire rolled up dough in plastic film and place it in the refrigerator for at least 3 hours (even overnight).
This will allow the dough to retain the right consistency when it comes to cutting it.
After this time, take it out of the refrigerator, remove the film and cut the dough into 5 mm slices. It should make approximately forty coffee swirls.
Arrange the coffee swirls thus obtained on a baking tray previously covered with baking paper, and bake in an oven preheated to 180° for 15 minutes
Now take your coffee swirls out of the oven and leave them to cool. Enjoy them with a good tea, alone or with your favourite coffee!
