101RECIPES: Coffee vegan ice cream

Hot is a constant presence during these days: refresh yourself with a cheap recipe, simple to make and really tasty

Ingredients for condensed vegetable milk

  • 300 ml of vanilla soy milk
  • 100 g of icing sugar
  • 2 tablespoons of brown sugar
  • 1 sachet of vanillina
  • 1 teaspoon of seed oil
  • 1 teaspoon of cornstarch

Ingredients for ice cream

  • 500 ml of vegetable cream without hydrogenated fats
  • 150 ml of condensed vegetable milk
  • one tablespoon of Pronto Arabica instant coffee
  • two cups of sweetened espresso coffee

Procedure for condensed vegetable milk

  1. Warm over low heat and stirring constantly: milk, sugars, vanillin and cornstarch to obtain a mixture without lumps
  2. Raise flame until mixture boils
  3. Now lower flame to a minimum and cook mixture until it has a dense composition and a darker color
  4. Remove pan from heat and pour it into a sterilized glass jar
  5. Let it cool and keep it in the fridge

Procedure for coffee vegan ice cream

  1. Whip cream, making sure it is very cold, until it is soft and firm
  2. Melt Pronto Arabica instant coffee in vegan condensed milk and add it to the whipped cream
  3. Add espresso and stir until you get a smooth cream
  4. Put ice cream in the freezer so that it is consolidated
  5. Before serving, add a sprinkling of Pronto Arabica coffee over ice cream
