Cream puffs are one of those desserts that never disappoint and that have the power to make anyone feel like an experienced pastry chef. You just need some free time and a great desire for …. cream puffs. Now put your chef hat on and… have fun!

Ingredients for 25 puffs

  • Water: 185 g
  • Milk: 25 ml
  • Butter: 165 g
  • Flour: 175 g
  • 5 whole eggs
  • A pinch of salt

Preparation of the puffs

  1. In a saucepan, pour the water, milk and butter
  2. Heat and melt
  3. Add the flour and mix vigorously until the resulting dough comes away from sides of the pan
  4. Remove the preparation from the heat and let cool for five minutes
  5. Incorporate the eggs one at a time; add each egg only after the previous one has been completely absorbed
  6. This way you will get a smooth and velvety dough
  7. Put the mixture in a piping bag with a round nozzle and pipe your puffs on a baking tray covered with parchment paper
  8. Before putting in the oven, lightly wet your fingers with water and gently squeeze the top of each puff
  9. Bake at 190° C for 15 minutes, then at 170° C for another 10 minutes (preheated oven)
  10. Take out of the oven and let cool

During cooking, you can prepare your coffee pastry cream:

Preparation of the coffee pastry cream

  1. Heat milk and dissolve the instant coffee
  2. Work the eggs and sugar until you get a creamy and fluffy mixture
  3. Add the warm milk to the preparation, pouring it slowly and continuing to stir
  4. Incorporate the sifted flour while continuing to beat the mixture with a whisk
  5. Transfer everything to a saucepan and simmer adding the cold coffee (a little at a time) keeping mixing up
  6. Cook for 5-7 minutes
  7. Remove from heat and let cool

At this stage, you can prepare the Salted Caramel.

Ingredients for the salted caramel

  • Sugar: 200 g
  • Cream for desserts 200 g
  • Butter: 180 g
  • Salt: 2 g

Preparation of the Salted Caramel

  1. Melt the sugar in a pan using low heat
  2. Add the butter
  3. Heat the cream
  4. When the butter has melted completely, add the hot cream
  5. Stir everything vigorously until you get a smooth, lump-free sauce
  6. Add the salt and stir a little more
  7. Cool to room temperature in a glass container

Now you can fill the puffs

  1. Remove the coffee pastry cream from the refrigerator
  2. With the tip of the piping bag, make a hole on the underside of each puff and insert the pastry cream
  3. Then dip one puff at a time into the caramel (or, if you prefer) use a spoon to pour a little salted caramel over each puff
  4. Place the puffs on a serving dish and serve them!
