Crusted prawns with a coffee reduction

Ingredients

  • 8 large king prawns, shelled and cleaned
  • 140 g of finely chopped almonds
  • 60 g of flour
  • 1 egg
  • 30 g of breadcrumbs
  • 4 tablespoons of olive oil (60 ml)
  • 2 cloves of garlic, crushed
  • 250 ml of strong coffee
  • 60 g of brown sugar
  • 1 teaspoon of lemon juice
  • salt and pepper to taste

 

Preparation

Preheat the oven to 200 degrees. Mix the finely chopped almonds, flour, breadcrumbs and beaten egg in a bowl.

Clean the prawns: rinse them in cold water, remove the heads, discard the legs and shells; finally, make an incision across the back and remove the black thread of intestine using a toothpick. Leave them to rest for a few minutes in the refrigerator soaked in oil, lemon and a pinch of salt.

After the prawns have been left to rest, coat them with the almond mixture, pressing them with your hands to ensure the mixture adheres well to each prawn. As you do this, arrange them on a tray ready to be pan-fried.

Heat olive oil and minced garlic in a skillet over medium-high heat. Add the almond-coated prawns and cook for 3-4 minutes per side, until the almond crust is golden brown and crispy.

Then, place the prawns on a baking sheet and bake for 5 to 7 minutes, or until cooked through and the almond crust is even crispier.

Meanwhile, prepare the coffee reduction: in a small saucepan, mix the coffee, brown sugar and lemon juice. Bring to the boil over a medium-high heat and reduce the consistency until the reduction is thick and syrupy.

Remove the prawns from the oven and arrange them on a serving platter. Pour the coffee reduction over the prawns and add a sprinkle of salt and pepper.
