101RECIPES: Espresso Chicken Breast
Quick and tasty, chicken breast cooked in a coffee sauce will be a second course that will amaze for its softness and its flavor, a combination of sour, sweet and coffee. Try it accompanied by boiled potatoes or other vegetables of your choice. Are you ready to taste the espresso chicken breast?
Ingredients (for 4 people)
- 2 cups of coffee
- 500 gr of chicken breast
- 50 gr of butter
- 130 ml of Moscato wine
- 2 teaspoons of mild mustard
- 4 tablespoons of white flour
To prepare the espresso chicken breast, first of all prepare the two cups of espresso coffee: for this recipe, we recommend Napoletano, a premium blend from 101CAFFE’ characterized by an intense flavor.
Once the chicken breasts have been cleaned, cut them into approximately 1-inch pieces with an irregular shape, flour them and set them aside.
In a small saucepan, place the butter, wine, mustard and espresso coffee, and after turning on the stove over medium-low heat, begin stirring with a pastry whisk until the coffee sauce has reached a smooth consistency. Remove the saucepan from the stove and allow the coffee sauce to cool.
Now place the chicken pieces in a pan and drizzle with some of the coffee sauce you have prepared. Turn on the stove at low heat, cover with a lid and add a little coffee sauce from time to time, so that the chicken cooks gently, without ever drying out. The chicken breasts should always be well sprinkled with espresso sauce.
After about twenty minutes of cooking, the coffee chicken breasts are ready to be served and enjoyed piping hot. And after such a special meal, you’ll need an equally special coffee, such as 101CAFFE”s Napoletano Premium!
