More than just a recipe – it’s a ritual, which in the Neapolitan tradition comes with the tazzulella ‘e café. This is the sugar-based coffee cream to put in the cup before pouring your espresso, at home as well as at the bar.

Ingredients for 3 coffees
- 6 teaspoons of caster sugar
- a few drops of coffee
Preparation
The preparation of the coffee cream is the same, whether you make it at home with the coffee from the moka pot or with the pod and capsule coffee maker, or the barista makes it with a professional machine.
Put a few drops of coffee in the sugar and stir vigorously with a teaspoon until it forms a nice cream, smooth and uniform.
Put a teaspoon of this cream in your cup, and pour your coffee until you see the cream appear on top of the coffee.
Now you’re ready to enjoy the “fourth C” of the ritual of Neapolitan espresso! (do you know the other three?)
