No-Bake Coffee Roll

Ingredients:

For the base:

  • 300g cocoa-flavored dry biscuits
  • 30g unsweetened cocoa powder
  • 30g powdered sugar
  • 100g butter
  • 100g cold whole milk

For the ricotta cream:

  • 200g well-drained cow’s milk ricotta cheese
  • 50g powdered sugar
  • 30ml coffee (espresso)

Instructions:

First, make the coffee and let it cool. Prepare the cream by placing the well-drained ricotta cheese in a bowl and adding the cooled coffee. Mix with a spatula, then add the powdered sugar and mix again. Once the mixture is smooth and homogeneous, refrigerate it.

Now, let’s focus on the base. Melt the butter and let it cool. Place the dry biscuits in a food processor and blend them until they become very fine crumbs. Transfer the crumbs to a bowl and add the cocoa powder, powdered sugar, and cooled melted butter. Mix everything together, then gradually add the milk, pouring it in a little at a time. Don’t pour all the milk at once; adjust the consistency as needed. The mixture should be compact and homogeneous.

Transfer the dough onto a sheet of plastic wrap, cover it with another sheet of plastic wrap, and use a rolling pin to flatten it into a rectangle approximately 25×30 cm in size. After rolling it out, remove the top layer of plastic wrap and spread the cooled ricotta cream onto the base, avoiding the edges. Roll up the base, using the plastic wrap to help you, gently but with slight pressure to compact the roll. Once done, place it in the freezer for two hours.

For an extra touch of indulgence, you can garnish the roll with a topping. We chose almond topping, but you can use any topping you like or leave it plain. Before enjoying the slices, let them rest for a few minutes. Deliciousness is guaranteed.
