101RECIPES: Nonna Anna’s Recipe – Coffee biscuits
Once you’ve had one, you will want another… These are the coffee biscuits that Nonna Anna has prepared for us today. They start to entice us with their smell, even when they are still in the oven … You can try this recipe when you are short on time as they are very quick to prepare. Are you ready?
- 60 ml of coffee (1 full espresso cup)
- 400 g of 00 flour
- 100 g of sugar
- 120 g of butter
- 2 eggs (1 whole + 1 yolk)
- 16 g of baking powder
- a pinch of salt
- 2 tablespoons of icing sugar
For the coffee biscuit recipe, the first thing to prepare is, as always, the coffee.
We have chosen Stromboli blend, a rich and intense coffee that will give not only its great taste but also its aroma.
Once prepared, pour the coffee into a cup and leave it to cool.
In the meantime, take the butter out of the fridge as it will need to be soft (at room temperature)
Put all the ingredients for the coffee biscuits into a bowl, leaving the yeast and the coffee for last.
Now mix them well, first with a spoon and then work the dough with your hands, until you achieve a consistency that you can form into a ball shape. Leave the dough in the bowl, cover it and place it in the fridge for half an hour.
In the meantime, turn on the oven to 150 degrees, static, and line a baking tray with grease-proof paper.
After half an hour, start shaping your coffee biscuits: take small amounts of dough and with your hands form balls with a diameter of roughly 2.5 – 3 cm.
Arrange the balls in a row on the baking tray, leaving a distance of approximately 2 fingers between each one. The cooking time is 15 minutes, but you can tell when they are a golden colour that the coffee biscuits are ready.
If they are not golden brown, leave them in the oven for a few more minutes.
You will be able to enjoy the aroma that the freshly baked biscuits give off but ideally taste them once they have cooled down.
For breakfast or a snack, Nonna Anna’s coffee biscuits are absolutely delicious for any occasion.
