101RECIPES: Prosperity Cake

The maca root grows at an altitude of 4,000 meters above sea level, and the Andean culture has always attributed very special beneficial properties to it. We’ll combine the useful with the enjoyable and use 101CAFFE’s Caffè della Prosperità to create a truly delicious energy-filled dessert: the Prosperity Cake! Are you ready?

Ingredients

  • 150 ml (i.e. 3 cups) of Caffè della Prosperità (with maca extract)
  • 3 eggs at room temperature
  • 180 gr of butter at room temperature
  • 300 gr of flour 00
  • 150 gr of sugar
  • 1 pinch of salt
  • 10 g baking powder for cakes
  • 1 sachet of vanillin

 

Preparation

To prepare the Prosperity Cake, first of all turn on the oven at 180°C (static mode).
Now prepare the 101CAFFE’ Caffè della Prosperità (in capsules for Nescafè® Dolce Gusto® machines) using 3 capsules of this product.
Set aside the three cups of Caffè della Prosperità you made and let them cool.
Sift the flour and place it in a bowl along with the baking powder.

In another bowl, put the butter in pieces and the sugar and whip them with an electric whisk for about 5 minutes so that the mixture becomes frothy.
Now add the whole eggs while continuously mixing with the whisk; put them in one at a time, so that each egg has time to mix in with the mixture before you add the next one.
When the mixture is smooth, add the salt and vanillin.

At this point, pour in one of the three cups of Caffè della Prosperità. Add a third of the flour with yeast, always slowly and most importantly without stopping mixing with the electric whisk (to avoid forming lumps).
Then pour in the second cup of Caffè della Prosperità, then the second third of the flour, then the third cup (again slowly) and the last part of the flour.
Mix well again with the electric whisk until the whole mixture is smooth and creamy.

Now it’s time to butter and flour the cake mould (23cm diameter) and pour in the soft mixture that will make up your Prosperity Cake.
Put in the oven (at 180 degrees as mentioned before) and let it bake for 45 minutes, in the low shelf.
Check the degree of baking after about forty minutes: if it is golden, do the “toothpick test” to see if it is baked. In this case, take it out of the oven and once it has cooled, place it on a suitable plate.
The Prosperity Cake is ready to be enjoyed, perhaps with a nice toast to health and prosperity!
