Red Velvet Cake with Coffee Mousse


For the buttermilk:

  • 125 gr of semi-skimmed milk
  • 125 gr of yogurt
  • 1 teaspoon of lemon juice

For the dough:

  • 200 gr of flour
  • 50 gr of bitter cocoa
  • 200 gr of sugar
  • 2 eggs
  • 1 teaspoon of baking soda
  • 1 teaspoon of apple vinegar
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon salt
  • 250 ml of buttermilk
  • 2 tablespoons of red food coloring

For the coffee mousse:

  • 200 ml of whipped cream
  • 200 gr of dark chocolate
  • 2 teaspoons of soluble coffee


The first task when preparing the Red Velvet cake with coffee mousse is to prepare the buttermilk. Combine the milk, yogurt and lemon juice in a bowl, then mix the ingredients and let them sit for at least 15 to 20 minutes.
Preheat the oven to 180 °C and butter a 22 cm baking dish with butter or nonstick spray. In a large bowl, mix together the flour, bitter cocoa, sugar, baking soda and salt until the mixture is homogenous.
Add the eggs, apple vinegar, vanilla extract and buttermilk, and mix until the batter is smooth and homogenous.
Add the red food coloring and mix again to distribute it evenly in the batter. Pour the batter into the buttered pan and bake for about 30 minutes or until a toothpick stuck through the center of the cake comes out clean.
Meanwhile, prepare the coffee mousse by heating the cream in a small saucepan until it boils. Remove from the heat and pour the hot cream over the dark chocolate, previously melted in a bowl. Stir until smooth and homogenous. Add the instant coffee and stir again. Let the mousse cool to room temperature.
Once the Red Velvet is cold, cut it with a sharp knife, first into a heart shape, the perfect shape for Valentine’s Day, and then cut it again into horizontal layers.
Stuff each Red Velvet layer with the coffee mousse using a pastry bag or spoon.
Your Red Velvet is ready to be offered to your valentine.
