Coffee Fondant

One of our 101CAFFE’ customer (store in Bari, via Dante) shared with us her recipe we tried and liked very much


  • 250g bitter chocolate cover
  • 200g of butter without salt
  • 6 egg yolks
  • 3 tablespoons of coffee liqueur 101CAFFE’ “Anima & Corpo” 
  • 200g of sugar
  • 120g of flour without yeast
  • 75g of cocoa
  • 1 teaspoon of instant coffee 101CAFFE’
  • 30g of cornstarch (a type of flour)
  • 6 egg whites
  • 1/2 cup of impalpable sugar (a type of icing sugar)
  • 12 silicone cups or small steel pudding moulds
  • 12 balls of coffee ice cream


  1. Mix flour, instant coffee, cocoa and cornstarch.
  2. Melt bitter chocolate cover in a bain-marie with butter and coffee liqueur. Wait until it cools.
  3. Beat egg yolks with sugar.
  4. Add melted chocolate mixture, almost cold.
  5. Mix well, add flour mixture and beaten egg whites with circular movements.
  6. Fill moulds up to 3/4 of their height and bake at 200° for 8 minutes. 
  7. Bake, sprinkle with impalpable sugar and serve hot with coffee ice cream!
  8. Take out of the oven, sprinkle with impalpable sugar and serve hot with coffee ice cream!
