Ricetta risotto zucca e caffè

Autumn comes and it’s time for one of our favorite food: pumpkin!
Here is a classic recipe variant with 101CAFFE’ touch.

Ingredients for 4 people

  • 350/400 grams of Carnaroli rice
  • 500 grams diced pumpkin
  • 100 grams of butter
  • 1 shallot
  • 1 tablespoon of crumbled amaretti
  • Vegetable broth
  • 2 tablespoons ground coffee


  1. Peel pumpkin and cut it into cubes
  2. Toast rice with butter and shallot
  3. In a large pan let shallot and pumpkin taste in the butter
  4. Slowly add vegetable broth until rice is cooked
  5. Just before finishing cooking rice, stir in a knob of butter
  6. Add diced pumpkin
  7. Serve sprinkling with crumbled amaretti and coffee powder


While adding broth to rice you can think of pouring two glasses of sparkling wine to give it a touch of flavor
