101RECIPES: Coffee cake with ricotta cheese and chocolate

Ingredients for a 24 cm mold

  • 200 gr of flour
  • 10 gr of cocoa
  • 150 gr of sugar
  • 1 sachet of baking powder
  • 2 whole eggs
  • 120 gr of butter
  • 100 ml (= 2 big cups) of coffee
  • 1 sachet of vanillin
  • 60 gr of dark chocolate chips
  • 250 gr of ricotta cheese
  • 3 tablespoons of dark chocolate spreadable cream


To prepare your coffee cake with ricotta and chocolate, first of all prepare the cream for the filling by putting the ricotta cheese (well drained) and the dark chocolate spread in a bowl. Once you have mixed these two ingredients well, put the mix in the refrigerator.
Before proceeding with the preparation, take the butter out of the fridge, so that it melts at room temperature, and prepare the coffee, letting it cool gradually.
Now prepare the coffee mixture by first whipping the eggs (which should be at room temperature) with the sugar until you have a frothy cream.
To the mixture just obtained, add the butter that was previously melted (at room temperature) and the coffee (also at room temperature). Mix thoroughly and add the sifted flour, baking powder, vanilla and cocoa. Mix everything very well (an electric whisk will make the work easier) and finally add the chocolate chips.
Pour the mixture of your coffee cake into the mold, which you have lined with parchment paper (or buttered and floured). On the surface, using a spoon, spread the ricotta and chocolate cream that you have removed from the refrigerator.

Place in a preheated oven at 180 degrees Celsius and let it bake for 30 minutes. Before taking it out, check that the cake is well baked by performing the toothpick test. Once your magnificent coffee cake with ricotta cheese and chocolate is ready, let it cool well before transferring it to a plate. A slice of coffee cake with ricotta cheese and chocolate is the ideal way to start the day, finish a lunch, enjoy your afternoons.
