101RECIPES: Coffee apple cake with walnuts
When it comes to cakes, nonna Anna never waits for others’ and prefers to make her own, this time a coffee apple cake with walnuts. We all love homemade cakes, with all the authentic flavors of “home” ingredients. Simply take a cake tin, an electric whisk and a couple of bowls and have a go too!

Ingredients
- 100 ml of coffee (=2 small cups)
- 4 eggs
- 120 g of butter
- 300 g of sugar
- 300 g of flour
- a pinch of salt
- 10 g of yeast
- 3 apples
- 100 g of chopped walnuts
- agave syrup
Method
As nonna Anna teaches us, to prepare coffee apple cake with walnuts, firstly prepare the coffee and set it aside to cool. For this recipe we have chosen Tazzulella coffee a balanced blend that is ideal for pairing with the slightly acidic taste of apples and that of walnuts. Similarly melt the butter and let it cool.
Break the eggs into a bowl (you will be using both the yolk and egg whites), add a pinch of salt and blend together with an electric whisk. Add the sugar a little at a time while continuing to whisk, then the cooled melted butter and blend again to mix these first ingredients well. Now while whisking, add the flour a little at a time and, when everything is evenly combined, add the yeast and continue to mix.
At this point you can add the coffee (cold), mixing again. Nonna Anna advises us to continue mixing with a spoon, which makes it easier to perceive the consistency of the cake mixture. Peel the apples, cut them into slices and add them to the ingredients, mixing everything together well.
Grease the cake tin with a little butter and sprinkle it with flour, then pour all the mixture into it.
For now we can call it “coffee apple cake”, as we only add the walnuts after cooking. Place in a preheated oven at 180° and bake for 30 minutes.
After the usual “toothpick test”, remove the coffee apple cake from the oven and place it on a heat-resistant surface. And now it’s time for the last “touch”: spread the agave syrup on the surface of the cake and then sprinkle it with the chopped walnuts. Now we can call it coffee apple cake with walnuts!
