101RECIPES: Cold pistachio and coffee cake

Ingredients
For the base
● 250 gr of biscuits (we recommend digestive biscuits)
● 120 gr of melted butter
For the filling
● 150 gr of mascarpone
● 100 gr of ricotta
● 3 spoons of sugar
● 50 gr shelled and peeled pistachios
● 50 ml of milk
● pistachio granules to taste
● 50 ml of coffee (= 1 cup)
Procedure
Start preparing the cold coffee and pistachio cake by first making the coffee. For this recipe we chose 101CAFFE”s Mezdé, a 100% Arabica blend with a gentle roast and delicate aroma, which goes perfectly with the flavor of pistachio. Once brewed, set it aside and let it cool.
Melt the butter over very low heat and chop the biscuits in the meantime. Once chopped, add them to the melted butter and mix. Place the mixture in a 22 cm cake tin and refrigerate for half an hour. At this point, put in a bowl two thirds of the mascarpone cheese, the ricotta and the sugar and mix everything with an electric whisk; add coffee and mix until everything is homogeneous. Remove the biscuits and butter base from the fridge and put this creamy mixture on top of the base, thus forming the first layer of the cold coffee and pistachio cake. Now it’s time to prepare the pistachios: put them (whole) in the milk and bring to boil; when they start to boil, remove from the heat and chop them in the milk with a hand blender. Add the remaining mascarpone to the mixture obtained and blend again so that everything is well mixed. This mixture is the second layer of your coffee and pistachio cake. The last ingredient is the pistachio granules, with which you will cover the surface of the cake. Then cover it with plastic wrap and put it in the refrigerator for at least a couple of hours, during which, in addition to assisting the harmonious mixing of the ingredients, the ideal temperature will be reached. The coffee and pistachio cake should be eaten cold. It nourishes, refreshes, invigorates… What else could we want from a cake?
