101RECIPES: Risotto with coffee and prawns
From the selection of coffee risottos included in the 101 Recipes, today we offer you a version with prawns: the tender texture of the prawns and their typical sweetish flavour make them the ideal companion for coffee, which we will use both during the cooking and at the end, as an embellishment: enjoy! Are you ready to prepare an amazing coffee and shrimp risotto?

Ingredients for 4 persons
- 320 gr of rice
- 12 prawns
- 1 espresso cup of coffee
- 2 shallots
- 100 gr of butter
- 1 litre of vegetable broth
- 2 tablespoons of extra virgin olive oil
- Salt
Method:
This time, the preparation of the coffee won’t be the first thing to think about as in the coffee and shrimp risotto recipe, the coffee is added when it is hot.
Prepare the vegetable broth. Chop the shallot and fry it in a saucepan with a teaspoon of oil. Add the rice and toast it lightly.
In the meantime, peel the prawns and place them in a pan in which a tablespoon of oil has been heated to a high temperature. Sear them for 30 seconds on each side and then set them aside.
It’s time to cook the toasted rice with the shallot, adding broth, a little at a time and stirring often. When the cooking is almost finished, prepare a cup of coffee and add it to the rice. For the coffee and prawn risotto recipe we chose Gran Milano coffee, a blend of the 101CAFFE’ Premium line with 80% Arabica, which transfers the aromatic notes, perfect for this type of dish, to the risotto. After pouring in the coffee, add the cold butter and mix everything together. It’s time to arrange the coffee and prawn risotto on the plates, placing the prawns in the centre (3 for each dish).
A light sprinkling of ground coffee will add the finishing touch to this elegant and exquisite dish.
