101RECIPES: Sugar-free coffee cake
Lovers of sweets and of all kinds of sugar, unite! Baking a soft and delicious cake without sugar is possible. Ready to accept the challenge? Here is the recipe for Sugar-free coffee cake!
- 180g of type 2 flour
- 40g of corn flour
- 60g of raisins
- 100g of almond milk
- 1 tablespoon of agave syrup
- 100 ml of coffee (i.e. 3 cups of espresso)
- 150g of clarified butter
- 2 teaspoons of soluble coffee powder
- 10g of yeast
- 1 pinch of salt
- 2 tablespoons of dark chocolate chips
To prepare the sugar-free coffee cake, first make 3 cups of coffee (but don’t add any sugar to them!). Immediately afterwards, melt the butter over a bain-marie and allow it to cool. When the coffee is ready, pour it into a bowl and, while it is still hot, add the raisins and agave syrup. Leave to soak and prepare another bowl with the flour, a pinch of salt, the soluble coffee powder and the yeast (let’s call them the “dry ingredients” for the sake of simplicity). Continue preparing the sugar-free coffee cake by adding into a third bowl the cornstarch and butter and then combine them together. Now, place the coffee with the raisins, agave and almond milk into this bowl and mix them together.
Now add all of the dry ingredients to the liquid and mix together. Add the dark chocolate chips and mix everything well to obtain an even consistency.
Heat the over to 180° (static) and while it’s heating, line a mold with baking paper. Pour the mixture into the mold and bake for 40 minutes. Your sugar-free coffee cake is now ready, but hold on: wait until it cools down!
