101RECIPES Pandoro-based dessert

Today we offer you a spoon dessert made of pandoro pieces, soaked in coffee, alternated with a delicious and delicate diplomatic vanilla cream. Dark chocolate chopped and added in the middle makes it simply irresistible!

Ingredients for 6 people

  • 500 g of pandoro
  • 3 egg yolks
  • 120 g of sugar
  • 80 g of cornstarch
  • 20 g of icing sugar
  • 1 vanilla bean
  • 600 ml of milk
  • 250 ml of cream
  • 1 long coffee (we recommend Gran Milano)
  • 60 g of dark chocolate
  • Bitter cocoa, as required


  1. Heat milk with vanilla bean seeds.
  2. Whip egg yolks with 100 g of sugar, until they become light and frothy.
  3. Combine cornstarch and mix.
  4. Pour hot milk on egg mixture. Pour mixture into a saucepan and cook cream for a few minutes. It must become thick and without lumps.
  5. Let it cool completely.
  6. Sweeten coffee.
  7. Cut pandoro into pieces and soak it with coffee.
  8. Whip cream with icing sugar until it reaches a firm consistency, add custard and continue whipping with electric whisk until you get a smooth and lump-free cream. 
  9. Chop chocolate finely with a knife.
  10. Take cups, make a layer of pandoro wet with coffee, cover with a few spoonfuls of cream.
  11. Add chopped chocolate and more pandoro.
  12. Alternate other layers and complete with the cream.
  13. Dust surface with a little bitter cocoa and put to rest in the fridge for 3-4 hours before serving.
